Ingredients

8 pitted dates (e.g. Medjool dates) – you can substitute with 40g sugar - 1 large ripe banana (or 1 1/2 small bananas)
- Juice from 1/2 orange
- 1 tsp vanilla powder
- 1 tsp true cinnamon
- 40g unsweetened cocoa powder
- 1 tsp baking powder
- 1 1/2 – 2 tbsp melted coconut oil
- 2 eggs
- 75g almond flour

If the dates are a bit hard, soak them in boiling water for a short while before blending.
Squeeze the juice from the orange.
Blend dates, bananas, orange juice and melted coconut oil until smooth.
Transfer the date/banana mixture to a bowl.
Add the rest of the ingredients and whisk the batter smooth with a whisk or electric mixer.
Divide the batter into muffin cups (only fill them halfway).
Bake them for approx. 10-15 minutes at 175 degrees Celsius in a preheated oven. Check continuously if they are done, as ovens vary greatly.
