Little Moon Buns

Ingredients

THE DOUGH:

  • 4 dl lukewarm water (mix cold water with boiling water to find the right temperature)
  • 25 g yeast
  • 1/2 dl oil
  • 1 tbsp sugar
  • 2 dl rolled oats
  • 1 dl finely sifted rye flour
  • 7-8 dl wheat flour 

You can also easily use a pre-made pizza dough :)

THE FILLING:

  • 1 can chopped tomatoes
  • 1/2 finely chopped onion
  • 1 medium-sized finely chopped carrot
  • 1/2 finely chopped bell pepper
  • Fat for sautéing
  • 1-2 dl grated cheese

Instructions

IF YOU MAKE THE DOUGH FROM SCRATCH:

Dissolve the yeast in the lukewarm water together with the sugar.

Add oil and stir.

Add rolled oats and flour and stir for as long as you can (the longer you stir, the fluffier the crumb will be).

Add flour until the dough no longer sticks to your fingers.

Let the dough rise in a warm place for approx. 30 minutes.

Meanwhile, prepare the filling for the moon bread.

Put fat in a pot and sauté the onion, carrot, and bell pepper for a couple of minutes, stirring constantly.

Add the chopped tomatoes and let it simmer for approx. 5 minutes.

If you want the filling to have a very fine consistency in the moon bread, blend the filling in the pot.

Punch down the dough and roll it out on the kitchen counter until the dough is about 1/2-1 cm thick.

Cut out approx. 8-10 round circles (e.g., using a cookie cutter, a glass, or a small bowl), so that each circle is about 15 cm in circumference (you decide the size).

Place the dough circles on a baking sheet lined with parchment paper.

HOW TO MAKE THE MOON BREAD:
Place about 2 tablespoons of filling on each circle and sprinkle a little grated cheese over the filling.

The filling should be placed in the middle of one half of each circle. This way, you can pull the other half of the dough over the filling to form the lid of the moon bread.

NOTE: Do not get filling all the way to the edge, otherwise the moon bread cannot be sealed tightly.

Once you have pulled the dough lid over the moon breads and sealed them, make sure to press the dough firmly together all around the edge, so that the filling does not fall out when the bread starts to rise in the oven.

Bake the moon breads in a preheated oven at 175 degrees Celsius for approx. 10-12 minutes. However, constantly check to see if they are done, as there is a big difference between ovens.
