Coconut granola

Kokosmüsli

Ingredients

  • 100 g rolled (or quick) oats
  • 100 g spelt flakes
  • 3 tbsp coconut oil
  • 50 g coarsely chopped almonds (chop them very finely if your child is under 3 years old)
  • 50 g sesame seeds
  • 50 g coarsely chopped hazelnuts (chop them very finely if your child is under 3 years old)
  • 50 g dates
  • 1 tsp vanilla powder
  • ½ tsp ground cinnamon
  • 1 dl syrup

Instructions

I've made this coconut muesli on Go' Morgen Danmark before – and it's not just the kids at home who love this muesli... the hosts loved it too;-)

Mix all the dry ingredients together in a bowl.

Put coconut oil and syrup in a pot and melt them together. Pour the dry ingredients into the pot with the sugar mixture and stir well!

Line a baking sheet with parchment paper and spread the muesli on it.

Spread the muesli in a thin layer on the parchment paper.

Bake the muesli for approx. 10-15 min. at 170 degrees in a preheated oven.

Remember to stir the muesli regularly, otherwise it will burn.

Let it cool and serve it on top of a portion of natural yogurt. You can also add some fresh fruit.

Can be stored in an airtight container for approx. 3 weeks.
